Air-Fried River Prawns & Peanuts

The air-fried river prawns & peanuts combination is inspired by an Asian snack often served with alcoholic beverages; it is fragrant, crispy, salty and spicy. River prawns means for very small-size shrimps that is common in Asia.
For peanuts, you can use a variety of store-bought peanuts in flavors of choice and texture. When the river prawns are cooked add the peanuts and chilis if you like your snacks spicy.

Ingredients
- ½ pound (250g) of river prawns or mini shrimps
- ½ cup all-purpose flour
- 1 small egg, beaten with 2 teaspoons water
- ¼ cup corn meal
- ¼ teaspoon cayenne powder
- ¼ teaspoon salt
- ¼ teaspoon ground white pepper
- 2 cups crispy peanuts, fried or roasted
- ¼ crushed Sichuan peppercorn
- Crushed chili flakes for sprinkle
- Coarse sea salt for sprinkle
Directions
- Set “air fry” function to “A4”; set temperature to “400F”; set timer to “8” minutes; place cooking basket in the middle of the air fryer when cooking; preheat the air fryer;
- Rinse the prawns thoroughly, pat them dry or use a vegetable spinner to get rid of the water and then pat dry;
- Place them on a large plate;
- Mix the flours with cayenne, salt, white pepper together and place the mixture on a flat plate. Beat the small egg and water together until smooth;
- Pour the thinned egg/water mixture over the river prawns, not all of it, just enough to cover the shrimp;
- Toss well and then add to the flour mixture;
- Toss the prawns into the flour gently, make sure all the prawns are thinly coated and not with clumps of flour;
- Cook the prawns in the air fryer; when cooking is finished, take the prawns out of the air fryer immediately, then gently toss the prawns so they are in separate pieces;
- Let the prawns cool off first and then mix in the peanuts and the rest of the herbs and spices;
- This is a great dish to have with beer, wine or other types of libations.
