Air-Fried Macaroni and Cheese Au Gratin

“Macaroni with cheese” is food for all ages. It is comforting, easy to make with lasting memories in passages of life for many. We are adding delicious “air-fried” texture to this popular dish using the Air Fryer. It is topped with cheese; you can even add cooked sausage, crisp bacon pieces of vegetables such chopped cauliflower or broccoli.

Ingredients
- 1-½ cups elbow macaroni
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- ½ teaspoon each of salt & black pepper
- 2 cups of shredded cheese (such as Swiss or cheddar)
- ½ cup chopped bacon, ham or cooked sausage
Directions
- Set “air fry” function to “A3”; set temperature to 325F; set timer to 15 minutes; place cooking basket in the middle of the air fryer when cooking; preheat the air fryer;
- Bring a pot of water to boil, add plenty of salt to the water;
- When the water boils, add the macaroni and cook until the macaroni comes to the desired consistency;
- While pasta is cooking, in a large skillet melt the butter; then add the flour until the mixture is lightly browned; 1-2 minutes;
- Over medium-high heat add the milk and whisk constantly to remove any lumps of flour or the sauce sticking to the skillet;
Add the salt and the black pepper and cook until the mixture begins to bubble; 5-6 minutes;
- Stir in most of the cheese (save some to use as topping for the air fryer,) and whisk until the cheese has melted;
- Turn off the heat;
- When the pasta is done to the desired consistency, drain and add to the cheese sauce pan;
- Stir the pasta and sauce together and add into a pan (a 2-quart or an 8 x 8 pan).
- Sprinkle topping(s), sausage, bacon or cheese, on top of the macaroni;
- Place the pan on the baking pan placed in the middle of the air fryer;
- Bake for 15 minutes, or until the topping has the desired consistency;
- Remove onto a rack, let cool for a few minutes before serving.
